Preparation
Combine the Greek yogurt, honey (or maple syrup), lime zest, lime juice, and vanilla extract in a medium bowl. Stir until smooth.
Prepare your baking sheet by lining it with parchment paper.
Pour the yogurt mixture onto the lined baking sheet and spread it evenly into a layer about 1/4 inch thick.
Sprinkle toppings over the yogurt layer to get creative!
Freeze for 4-6 hours until the yogurt bark is solid.
Soften slightly by letting it sit for a few minutes before breaking into pieces.
Serve immediately or store in an airtight container in the freezer for up to 2 weeks.
Notes
For a more intense lime flavor, let the zest and juice sit in the yogurt mixture for about 10 minutes before spreading it onto the baking sheet.
