Baking
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
Mash the ripe bananas in a large mixing bowl until smooth. Stir in the melted coconut oil until well combined.
Combine the honey and vanilla extract with the banana mixture, mixing thoroughly.
Beat in the large egg until fully incorporated.
Whisk together the baking soda, salt, ground cinnamon (if using), and all-purpose flour in a separate bowl.
Fold the dry ingredients into the wet mixture gradually, stirring just until combined.
Gently add the optional chopped nuts and chocolate chips.
Pour the batter into your prepared loaf pan and smooth the top.
Bake in the preheated oven for 50-60 minutes, checking with a toothpick.
Cool the banana bread in the pan for about 10 minutes before transferring to a wire rack.
Slice and enjoy your honey vanilla banana bread!
Notes
Optional: Top slices with a drizzle of honey for added sweetness. Use very ripe bananas for the best texture and sweetness. Check bread at 50 minutes to avoid overbaking.
