Method

How to Make Healthy Chicken & Sweet Potato Rice Bowl

  2. Toss the diced sweet potatoes in a bowl with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread the sweet potatoes evenly on a baking sheet in a single layer.
  4. Roast the sweet potatoes in the preheated oven for about 20–25 minutes, stirring halfway through.
  5. Heat a non-stick skillet over medium heat.
  6. Add the seasoned chicken pieces to the hot skillet with salt and pepper.
  7. Layer the cooked brown rice, roasted sweet potatoes, cooked chicken, and steamed broccoli in bowls.
