Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts the star of the dish

  • 3 tablespoons lime juice freshly squeezed
  • 3 cloves garlic minced
  • 1 teaspoon cumin adds warm notes
  • 1 teaspoon paprika adds smokiness
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Toppings
  • 2 pieces ripe avocados grilled to perfection
  • 1/4 cup fresh cilantro chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped

Method

Instructions
  1. In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag. Pour the marinade over the chicken and marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat, around 375°F–400°F.
  4. Remove the chicken from the marinade and grill for 6–7 minutes on each side until fully cooked.
  5. Grill the avocado halves cut-side down for about 2–3 minutes until slightly softened.
  6. Assemble by placing the grilled chicken on a serving platter and topping with grilled avocado, cherry tomatoes, red onion, and cilantro.
