  • 2 tablespoons olive oil for marinade
  • 1 cup lime juice freshly squeezed
  • 3 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Toppings
  • 2 pieces ripe avocados
  • 1/4 cup fresh cilantro chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped

Method

Steps to Prepare
  1. In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over it. Marinate for at least 30 minutes or up to 2 hours.
  3. Preheat your grill to medium-high heat, around 375°F–400°F.
  4. Remove the chicken from the marinade and discard it. Grill the chicken for 6–7 minutes on each side, or until fully cooked.

  6. Place the grilled chicken on a serving platter and top with grilled avocado halves, cherry tomatoes, red onion, and chopped cilantro.
