Method

How to Make Greek Meatballs in Lemon Sauce
  1. In a large bowl, mix together the ground beef, grated onion, arborio rice, parsley, dill, egg, oregano, salt, and pepper until everything is well combined.
  2. Using your hands, form the mixture into small meatballs, about 1 to 1.5 inches in diameter.
  3. In a large pot, bring the chicken broth and olive oil to a gentle boil over medium heat.
  4. Carefully add the meatballs to the simmering broth. Reduce the heat to low, cover the pot, and cook for about 25–30 minutes.
  5. In a separate bowl, vigorously whisk the 2 eggs. Gradually add the lemon juice while continuing to whisk.
  6. Slowly ladle in some hot broth while whisking constantly to temper the egg-lemon mixture.
