Preparation
Combine the flour, cold butter, powdered sugar, and salt in a bowl, resembling coarse crumbs.
Add egg yolk and cold water, mixing until the dough holds shape.
Shape the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Blend ricotta, honey, eggs, vanilla, lemon zest, cinnamon, and salt in a large bowl until smooth.
Preheat the oven to 350°F (175°C).
Roll out the chilled dough and press it into a 9-inch pie pan.
Pour the filling into the crust, spreading it evenly.
Bake for 30–35 minutes, until set and lightly golden.
Cool for a few minutes before slicing.
Drizzle extra honey over the pie before serving.
Serve warm or at room temperature.
Notes
Optional: Top with crushed nuts for added crunch.
