Ingredients

For the Base
  • 1 cup cottage cheese creamy foundation
  • 1 cup cherry tomatoes cut in halves
  • 1 medium cucumber diced
  • 1/4 medium red onion sliced
For the Flavor
  • 1/2 cup Kalamata olives pitted
  • 1 medium bell pepper diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
For the Dressing
  • 2 tablespoons olive oil rich base
  • 1 tablespoon red wine vinegar adds acidity
  • 1 teaspoon dried oregano traditional Greek flavor
  • to taste salt
  • to taste pepper

Method

Preparation
  1. In a large bowl, gently mix the cottage cheese, cherry tomatoes, cucumber, red onion, Kalamata olives, bell pepper, feta cheese, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the combined salad ingredients and toss gently.
  4. Serve immediately or cover and chill in the refrigerator for 30 minutes before serving.
