Preparation
In a large bowl, gently mix the cottage cheese, cherry tomatoes, cucumber, red onion, Kalamata olives, bell pepper, feta cheese, and chopped parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
Pour the dressing over the combined salad ingredients and toss gently.
Serve immediately or cover and chill in the refrigerator for 30 minutes before serving.
Notes
Optional: Add a sprinkle of extra feta on top before serving for an added touch of creaminess.
