Cooking Steps
Bring a large pot of salted water to a boil.
Add the soba noodles and cook according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water.
In a large skillet or wok, heat the sesame oil over medium heat.
Add minced garlic and sauté for about 1-2 minutes until fragrant and lightly golden.
Stir in the soy sauce, rice vinegar, honey (or maple syrup), and optional chili paste. Simmer for another 1-2 minutes.
Toss the cooked soba noodles into the skillet with the garlic sesame sauce.
If using fresh vegetables, add them now and toss for an additional 1-2 minutes.
Sprinkle with toasted sesame seeds and sliced green onions before serving.
Notes
Rinse soba noodles under cold water to prevent clumping. Watch garlic closely while sautéing to avoid burning. Consider adding lime juice for extra flavor before serving.
