Cooking Steps
Pat the steaks dry with paper towels, then season generously with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Add the steaks to the skillet and cook for about 4–5 minutes on one side without moving them.
Flip the steaks, then add 2 tablespoons of butter and the minced garlic to the skillet. Cook for another 4–5 minutes for medium-rare.
Once cooked to your liking, remove the steaks from the skillet and let them rest on a plate.
In the same skillet, lower the heat to medium and add the heavy cream, stirring to combine.
Stir in the grated Parmesan cheese and Italian seasoning if using.
Cook for 2–3 minutes, stirring continuously until the sauce thickens to your liking. Season with salt and pepper to taste.
Once rested, slice the steaks against the grain.
Plate the sliced steak, drizzling generously with the Parmesan cream sauce, and garnish with chopped parsley if desired.
Notes
For best flavor, let steaks rest after cooking and drizzle a little extra olive oil for added richness.
