How to Make Famous La Scala Chopped Salad
In a large bowl, combine chopped romaine lettuce, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced radishes, garbanzo beans, diced salami, diced provolone cheese, halved Kalamata olives, and chopped parsley. Mix well.
In a small bowl or jar, whisk together red wine vinegar, olive oil, Dijon mustard, honey (if using), salt, and pepper until well-blended.
Pour the dressing over the salad mixture and toss gently to combine.
Serve immediately and enjoy the burst of flavors.
Notes
For added flavor, allow the salad to marinate for 10-15 minutes before serving if desired. Optional: Add a sprinkle of feta cheese.
