How to Make Danish Almond Puff
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Combine flour, cold butter, granulated sugar, and salt in a mixing bowl, mixing until it resembles coarse crumbs.
Add cold water gradually, mixing until the dough comes together. Form it into a rectangle, wrap it, and refrigerate for 30 minutes.
Mix almond paste, granulated sugar, softened butter, egg, almond extract, and vanilla extract in a bowl until smooth.
Roll out the chilled dough on a floured surface into a rectangle about 1/4 inch thick.
Transfer the rolled dough to the prepared baking sheet. Score a border around the edges about 1 inch in.
Spread the almond filling evenly within the scored border and sprinkle sliced almonds on top.
Bake in the preheated oven for 25–30 minutes, until golden brown and filling is set.
Cool slightly on the baking sheet.
Whisk together powdered sugar and milk until smooth for the glaze.
Drizzle the glaze over the cooled almond puff.
Slice into squares or triangles and serve warm or at room temperature.
Notes
Serve with a dusting of extra powdered sugar for an elegant touch. Ensure cold butter is used for flakiness; avoid warm butter.
