Method

Curry Spiced Roasted Chicken Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Mix olive oil, minced garlic, curry powder, salt, cumin, coriander, paprika, black pepper, cinnamon, and cardamom in a bowl.
  3. Rub the seasoning mixture all over the chicken thighs.
  4. Place the chicken on a baking sheet or oven-safe skillet. Roast for 35–40 minutes, until the skin is crispy and golden brown.
  5. Prepare the apple miso sauce while the chicken is roasting. In a saucepan, add apple cider, brown sugar, white miso, and apple cider vinegar. Whisk to combine.
  6. Add butter, sliced shallots, and Honeycrisp apple to the saucepan. Cook over medium heat until the apples soften and the sauce thickens, about 8–10 minutes.
