Curry Spiced Roasted Chicken Instructions
Preheat the oven to 400°F (200°C).
Mix olive oil, minced garlic, curry powder, salt, cumin, coriander, paprika, black pepper, cinnamon, and cardamom in a bowl.
Rub the seasoning mixture all over the chicken thighs.
Place the chicken on a baking sheet or oven-safe skillet. Roast for 35–40 minutes, until the skin is crispy and golden brown.
Prepare the apple miso sauce while the chicken is roasting. In a saucepan, add apple cider, brown sugar, white miso, and apple cider vinegar. Whisk to combine.
