Ingredients

Cucumbers
  • 2 large cucumbers These provide the perfect crunch.
Chicken Salad
  • 2 cups cooked chicken Shredded or diced.
  • 1/2 cup Greek yogurt Healthier alternative to mayonnaise.
  • 1 cup celery Chopped.
  • 1/4 cup red onion Chopped.
  • 1 cup bell pepper Chopped.
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
Garnish
  • 1 tablespoon fresh dill Chopped.

Method

Preparation Steps
  1. Combine ingredients in a bowl. Mix together the cooked chicken, Greek yogurt, celery, red onion, bell pepper, Dijon mustard, garlic powder, salt, and pepper until everything is well coated and flavorful.
  2. Slice cucumbers. Using a vegetable peeler or mandoline, slice the cucumbers into thin strips lengthwise, about 1/8 inch thick.
  3. Lay cucumber slices flat. Place one cucumber slice on a clean surface and scoop a spoonful of the chicken salad at one end.
  4. Roll carefully. Start at the end with the filling, and gently roll the cucumber slice around the chicken salad.
  5. Secure if needed. Use a toothpick to gently secure it if the roll isn’t holding together well.
  6. Arrange on a platter. Place the roll-ups on a serving platter and garnish with fresh dill.
  7. Serve immediately. Enjoy these fresh roll-ups right away.
