Preparation Steps
Combine ingredients in a bowl. Mix together the cooked chicken, Greek yogurt, celery, red onion, bell pepper, Dijon mustard, garlic powder, salt, and pepper until everything is well coated and flavorful.
Slice cucumbers. Using a vegetable peeler or mandoline, slice the cucumbers into thin strips lengthwise, about 1/8 inch thick.
