How to Make Crunchy Chicken Salad Cucumber Roll-Ups
In a medium bowl, combine the cooked chicken, Greek yogurt, celery, red onion, bell pepper, Dijon mustard, garlic powder, salt, and pepper. Stir until everything is beautifully blended and creamy.
Using a vegetable peeler or mandoline, slice the cucumbers lengthwise into thin strips, about 1/8 inch thick.
