Method
Preparation
Pound the chicken between two sheets of plastic wrap to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
Set up three shallow dishes for flour, beaten eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, oregano, and basil.
Bread each chicken breast by dipping in flour, then beaten eggs, and finally coating with the breadcrumb mixture.
Heat about 1/2 inch of oil in a skillet over medium-high heat until it shimmers.
Carefully fry the breaded chicken breasts for 4–5 minutes on each side until golden brown. Drain on paper towels.
Preheat the oven to 375°F (190°C) while the chicken is frying.
Spread a thin layer of marinara sauce in a baking dish, place the fried chicken on top, add more marinara sauce and sprinkle mozzarella cheese.
Bake in the preheated oven for 15–20 minutes until the cheese is melted and bubbling.
Garnish with fresh basil leaves and serve hot.
Notes
For an extra flavor boost, consider drizzling with olive oil before serving.
