Cooking Steps
Prepare the salmon fillets by patting them dry with paper towels and seasoning both sides with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Place the salmon fillets into the pan.
Sear the salmon for about 4-5 minutes until it forms a golden-brown crust. Flip the fillets and cook for another 3-4 minutes.
Remove the salmon from the skillet and keep it warm.
Sauté the minced garlic and chopped sun-dried tomatoes in the same skillet for about 1-2 minutes.
Add the heavy cream, bringing it to a gentle simmer. Stir in the fresh spinach.
Mix in the Italian seasoning and grated Parmesan cheese, stirring until the cheese melts.
Return the cooked salmon to the skillet, spooning the sauce over each fillet. Simmer for an additional 2-3 minutes.
Garnish with fresh basil before serving.
Notes
Serve with rice, pasta, or a fresh salad for a complete meal. Top with extra Parmesan for added richness.
