Cooking Steps
Season both sides of the chicken breasts with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Cook the chicken breasts in the skillet for about 5–7 minutes on each side.
Remove chicken from the skillet and set aside to keep warm.
Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
Pour in the heavy cream and bring it to a gentle simmer, then mix in Parmesan cheese and Italian seasoning.
Stir in the sun-dried tomatoes and fresh spinach, cooking for about 2–3 minutes.
Return the chicken to the skillet, spooning some sauce over the top and let it simmer for an additional 2–3 minutes.
Garnish with fresh basil if desired before serving.
Serve hot and enjoy with your choice of sides.
Notes
Optional: Add an extra sprinkle of Parmesan on top before serving.
