Method

Steps
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the chicken breasts for 5–7 minutes on each side, until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. Sauté the minced garlic in the same skillet for about 30 seconds until fragrant.
  6. Add the chopped sun-dried tomatoes and cook for another minute.
  7. Stir in the fresh spinach and cook until wilted.
  8. Pour in the heavy cream and add the grated Parmesan cheese, Italian seasoning, and red pepper flakes if using.
  9. Stir well and let the sauce simmer for 2–3 minutes until slightly thickened.
  10. Return the cooked chicken to the skillet, spooning the creamy sauce over the top.
  11. Let it simmer for an additional 2–3 minutes to heat through.
  12. Garnish with fresh basil if desired and serve hot.
