Ingredients

For the Chicken
  • 4 breasts Boneless, skinless chicken a lean cut that cooks quickly
  • to taste Salt for seasoning
  • to taste Pepper for seasoning
For the Sauce
  • 2 tablespoons Olive oil for browning chicken
  • 3 cloves Garlic minced
  • 1 cup Heavy cream for a creamy base
  • 1 cup Parmesan cheese freshly grated
  • 1/2 cup Sun-dried tomatoes preferably in oil
  • 2 cups Fresh spinach
  • 1 teaspoon Italian seasoning for flavor
For Garnishing
  • to taste Fresh basil optional but recommended

Method

Cooking Steps
  1. Season both sides of the chicken breasts with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the chicken breasts in the skillet for about 5–7 minutes on each side.
  4. Remove chicken from the skillet and set aside to keep warm.
  5. Sauté the minced garlic in the same skillet for about 1 minute until fragrant.
  6. Pour in the heavy cream and bring it to a gentle simmer, then mix in Parmesan cheese and Italian seasoning.
  7. Stir in the sun-dried tomatoes and fresh spinach, cooking for about 2–3 minutes.
  8. Return the chicken to the skillet, spooning some sauce over the top and let it simmer for an additional 2–3 minutes.
  9. Garnish with fresh basil if desired before serving.
  10. Serve hot and enjoy with your choice of sides.
