How to Make Creamy Tomato Tortellini Soup

  3. Stir in the minced garlic, cooking for an additional 30 seconds until fragrant.
  4. Pour in the crushed tomatoes and stir to combine.
  5. Pour in the vegetable broth and bring the mixture to a gentle simmer.
  6. Lower the heat and stir in the heavy cream until well combined.
  7. Sprinkle in the dried basil, dried oregano, salt, and pepper to taste.
  8. Allow the soup to simmer for about 5 minutes.
  9. Introduce the cheese tortellini and cook according to package instructions.
  10. If using, stir in the fresh spinach during the final minute of cooking until just wilted.
  11. Ladle the hot soup into bowls, garnishing with grated Parmesan cheese and fresh basil leaves.
