Ingredients

For the Pasta
  • 12 ounces pasta choose your favorite shape, like penne or fusilli
For the Sauce
  • 1 pound smoked sausage sliced
  • 1 tablespoon olive oil for browning the sausage
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper sliced any color works
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese freshly grated is best
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste
For Garnish
  • fresh parsley for garnish, optional

Method

Directions
  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced smoked sausage to the skillet, cooking for about 5–7 minutes.
  4. Stir in the chopped onion, minced garlic, and sliced bell pepper. Cook for an additional 3–4 minutes.
  5. Pour in the heavy cream and chicken broth, stirring gently to combine. Bring to a simmer.
  6. Sprinkle in the grated Parmesan cheese and Italian seasoning. Stir until melted and creamy.
  7. Add the cooked pasta to the skillet and toss to coat thoroughly. Cook for an additional 2–3 minutes.
  8. Serve immediately, garnished with fresh parsley if desired.
