Cooking Instructions
In a large pot, bring salted water to a boil.
Add the pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
In a large skillet, heat the olive oil over medium heat.
Add the chopped onion and sauté for about 3-4 minutes until translucent.
Stir in the minced garlic and sliced mushrooms. Cook for about 5-7 minutes, or until the mushrooms are tender.
Pour in the heavy cream and bring to a gentle simmer. Cook for about 2-3 minutes until slightly thickened.
Stir in the grated Parmesan cheese, thyme, salt, and pepper. Mix until the cheese is melted.
Add the cooked pasta to the skillet with the mushroom sauce. Toss to combine, adding reserved pasta water as needed for desired consistency.
Serve hot, garnished with fresh parsley and extra Parmesan cheese if desired.
Notes
Optional: Add crushed red pepper flakes for a hint of spice.
