Ingredients

For the Casserole
  • 2 cups cooked chicken shredded or diced
  • 1 cup bell peppers sliced, mix of colors
  • 1 medium onion sliced
  • 1 can (10 oz) diced tomatoes with green chilies drained
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
For the Topping
  • 2 cups shredded cheese cheddar or Mexican blend
  • 1 cup tortilla chips crushed
  • fresh cilantro optional, for garnish

  • Mixing bowl
  • aluminum foil

Method

Steps
  1. Preheat your oven to 350°F (175°C).
  2. Combine all ingredients in a large mixing bowl.
  3. Transfer the chicken mixture into a greased 9x13-inch baking dish.
  4. Sprinkle the shredded cheese generously over the top of the chicken mixture.
  5. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  6. Uncover and continue baking for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Top the casserole with crushed tortilla chips.
  8. Garnish with fresh cilantro before serving, if desired.
  9. Serve warm and enjoy!
