In a saucepan over medium heat, combine the heavy cream, whole milk, granulated sugar, and instant coffee granules. Stir gently until the mixture is hot but not boiling.
Remove the saucepan from heat and stir in the vanilla extract.
Add the bloomed gelatin to the hot coffee mixture and stir until completely dissolved.
Carefully pour the mixture into individual serving cups or molds.
Cover the cups with plastic wrap and refrigerate for at least 4-6 hours to set.
