Method

How to Make Coconut Date Energy Balls
  1. In a food processor, combine the pitted dates, rolled oats, shredded coconut, nut butter, honey (or maple syrup), vanilla extract, cinnamon (if using), and salt. Pulse until everything is evenly mixed and forms a sticky dough.
  2. Process the mixture until it’s well combined and sticky. Scrape down the sides of the bowl as needed for an even consistency.
  3. If the mixture feels too sticky to manage, refrigerate it for about 10–15 minutes.
  4. Take small portions of the mixture, roughly 1 tablespoon each, and roll them into balls using your hands. Optionally, roll the balls in additional shredded coconut to coat.
  5. Place the energy balls on a baking sheet lined with parchment paper and refrigerate for about 30 minutes.
  6. Once chilled, transfer the energy balls to an airtight container for storage.
