Directions
In a medium saucepan, add the rolled oats, coconut milk, shredded coconut, maple syrup, vanilla extract, and salt. Stir gently to blend all the flavors together.
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to prevent sticking.
Once boiling, reduce the heat to low. Let the oats simmer for about 5–7 minutes, stirring occasionally until they become creamy and have absorbed most of the liquid.
Remove the saucepan from the heat. Spoon the creamy coconut oats into serving bowls.
Top your Coconut Cream Oats with fresh fruit, chopped nuts, and extra shredded coconut if desired.
