Preparation
Preheat your oven to 375°F (190°C).
Cook the ground beef or turkey with chopped onion in a large skillet over medium heat until browned.
Add half of the chili seasoning, diced tomatoes, chili beans, frozen corn, water, and salt, then simmer until thickened, about 10 minutes.
Melt butter in a separate saucepan over low heat. Stir in milk and then add the mashed potato flakes, mixing until smooth and creamy.
Spread the chili mixture evenly into a baking dish. Top it with the creamy mashed potatoes.
Sprinkle the remaining cheese over the top and bake for 20-25 minutes until melted and golden brown.
Let rest for 5 minutes before serving.
Notes
Garnish with chopped green onions for a fresh burst of flavor.
