Method

How to Make Chicken Spiedini
  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, black pepper, and red pepper flakes. Let the chicken soak in this mix for at least 30 minutes.
  2. In a separate bowl, crack and beat the egg. This will help create a nice coating on the chicken.
  3. In another bowl, combine breadcrumbs, grated Parmesan cheese, salt, and black pepper. Stir well to mix all the dry ingredients together.
  4. Once marinated, thread the chicken pieces onto skewers. Dip each skewer in the beaten egg, then coat with the breadcrumb mixture, pressing gently.
  5. If frying, heat olive oil in a skillet over medium-high heat and cook the skewers for about 3–4 minutes per side until golden brown. If baking, preheat oven to 400°F (200°C), place skewers on a lined baking sheet, drizzle with olive oil, and bake for 15–18 minutes.
