Method

How to Make Chicken Noodle Soup
  1. In a large pot, warm 1 tablespoon of olive oil over medium heat.
  2. Add the chopped onion, sliced carrots, and sliced celery. Sauté for about 5–7 minutes until the vegetables are tender and the onion is translucent.
  3. Stir in 3 cloves of minced garlic and cook for an additional minute until fragrant.
  4. Add 8 cups of chicken broth to the pot, along with the cooked chicken, 1 teaspoon of dried thyme, and 1 teaspoon of dried parsley. Season with salt and pepper to taste.
  5. Turn up the heat and bring the soup to a boil.
  6. Once boiling, add 2 cups of egg noodles or your choice of pasta. Stir gently and allow the noodles to soak in all the flavors.
  7. Reduce the heat and let the soup simmer for about 10–12 minutes, or until the noodles are tender.
  8. If desired, stir in the juice of 1 lemon for added brightness.
  9. Ladle the soup hot into bowls and garnish with fresh chopped parsley.
