Method
Preparing Cheesy Pesto Rolls
Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
Mix the all-purpose flour, baking powder, salt, and garlic powder (if using) in a mixing bowl.
Combine in the shredded mozzarella cheese and olive oil until well blended.
Add water gradually, one tablespoon at a time, until a soft dough forms.
Roll out the dough on a lightly floured surface into a rectangle about 1/4 inch thick.
Spread the pesto evenly over the rolled-out dough, leaving a small border around the edges.
Roll the dough from one long edge into a tight log, pinching the edges to seal.
Slice the rolled dough into 1-inch pieces and arrange them on the prepared baking sheet.
Brush the tops with beaten egg if desired, then sprinkle with Parmesan cheese.
Bake in the preheated oven for 15-20 minutes or until golden brown.
Cool the rolls for a few minutes on a wire rack.
Serve warm as an appetizer or snack, with marinara sauce for dipping.
Notes
Optional: Add a sprinkle of fresh basil before serving for extra flavor.
