Ingredients

  • 3 cups cooked chicken shredded or cubed
  • 2 cups cooked rice leftover rice preferred
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese reserve some for topping
  • 1 cup frozen mixed vegetables no need to thaw
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt to taste
  • pepper to taste

  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, cooked rice, cream of chicken soup, sour cream, shredded cheddar cheese, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Stir until everything is well-coated and evenly mixed.
  3. Pour the flavorful mixture into a greased 9x13-inch baking dish, spreading it out evenly.
  4. Mix the breadcrumbs with the melted butter in a small bowl and sprinkle evenly over the casserole. Add the reserved shredded cheddar cheese.
  5. Bake in the preheated oven for 25–30 minutes, or until the casserole is heated through and the top is golden brown.
  6. Remove from the oven and let it cool for a few minutes before serving.
  7. Serve warm and enjoy!
