Preheat your oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
Melt the mozzarella and cream cheese together in a microwave-safe bowl.
Whisk together the eggs, garlic powder, onion powder, salt, and baking powder until well combined. Add melted cheese mixture and blend thoroughly.
Fold in the grated Parmesan and optional herbs until evenly distributed.
Pour the batter into prepared loaf pan, spread it evenly.
Bake in the preheated oven for 20-25 minutes until golden brown and a toothpick comes out clean.
Cool the bread for 5-10 minutes before transferring to a wire rack to cool completely.
Slice the bread once cooled and enjoy!
Notes
For best results, ensure cheeses are at room temperature before melting. Start checking for doneness at 20 minutes to avoid overbaking.
