Method

How to Make Cheesy Broccoli Stuffed Potatoes
  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes thoroughly under cool water. Prick each potato several times with a fork.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes, until tender.
  4. Steam or boil the broccoli florets until tender, around 5-7 minutes for fresh broccoli.
  5. Chop the cooked broccoli into small pieces.
  6. Combine the chopped broccoli, shredded cheddar cheese, sour cream, milk, melted butter, garlic powder, salt, and pepper in a mixing bowl.
  7. Slice each baked potato in half lengthwise. Carefully scoop out some flesh, leaving enough to maintain its shape.
  8. Stuff each potato half generously with the cheesy broccoli mixture. Top with additional shredded cheddar cheese.
