Cooking Instructions
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes thoroughly and pierce them several times with a fork.
Place the sweet potatoes on a baking sheet and drizzle with olive oil. Bake for 40-45 minutes.
Mix the shredded chicken, buffalo sauce, cream cheese, and half of the shredded cheddar cheese in a bowl. Season to taste with salt and pepper.
Remove sweet potatoes from the oven, let cool, cut in half lengthwise, and scoop out some flesh.
Spoon the buffalo chicken mixture into each sweet potato half.
Sprinkle the remaining shredded cheddar cheese on top.
Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes.
Garnish with chopped green onions and serve warm.
Optional: Drizzle with extra buffalo sauce for an extra kick!
Notes
Make sure to pierce the sweet potatoes with a fork to allow steam to escape. Check for tenderness around the 40-minute mark to avoid dryness.
