How to Make Brown Butter Pear Tart
Preheat the oven to 350°F (175°C) and grease your tart pan.
Combine the flour, powdered sugar, and salt in a mixing bowl.
Add the cold, cubed butter and work it into the flour until it resembles coarse crumbs.
Stir in the egg yolk, then add cold water, one tablespoon at a time.
Press the dough into the tart pan and prick the bottom with a fork.
Bake for 15–20 minutes until lightly golden, then let cool slightly.
Melt the butter in a saucepan, swirling until it turns golden brown.
Whisk together the granulated sugar, eggs, vanilla, cinnamon, and salt.
Slowly add the brown butter and mix until smooth.
Stir in the heavy cream until combined.
Arrange the sliced pears in the cooled tart crust.
Pour the brown butter mixture over the pears.
Return the tart to the oven and bake for 25–30 minutes until set.
Cool for at least 15 minutes before slicing.
Serve warm or at room temperature, optionally topped with whipped cream or ice cream.
Notes
Use cold butter for the crust for a flaky texture. Watch the brown butter closely to avoid burning. Allow tart to cool before slicing for clean pieces. Dust with powdered sugar for a finish.
