Method

How to Make Blue Cheese Crusted Steak
  1. Pat the steaks dry with paper towels and season both sides generously with salt and pepper.
  2. Preheat the oven to 400°F (200°C).
  3. Heat olive oil in an oven-safe skillet over medium-high heat until shimmering.
  4. Sear steaks for 3-4 minutes on each side until a crust forms. Spread Dijon mustard on top in the last minute if using.
  5. In a small bowl, combine crumbled blue cheese and breadcrumbs until well mixed.
  6. Generously spoon the blue cheese mixture over each steak.
  7. Transfer skillet to the oven and bake for 5-7 minutes for medium-rare.
  8. Add a tablespoon of butter to the skillet during the last minute of baking.
  9. Let the steaks rest for about 5 minutes after baking.
