How to Make Blue Cheese Crusted Steak
Pat the steaks dry with paper towels and season both sides generously with salt and pepper.
Preheat the oven to 400°F (200°C).
Heat olive oil in an oven-safe skillet over medium-high heat until shimmering.
Sear steaks for 3-4 minutes on each side until a crust forms. Spread Dijon mustard on top in the last minute if using.
In a small bowl, combine crumbled blue cheese and breadcrumbs until well mixed.
Generously spoon the blue cheese mixture over each steak.
Transfer skillet to the oven and bake for 5-7 minutes for medium-rare.
Add a tablespoon of butter to the skillet during the last minute of baking.
Let the steaks rest for about 5 minutes after baking.
Sprinkle chopped parsley on top before serving.
Serve alongside your favorite sides.
