How to Make Biscoff Stuffed Chocolate Cookies
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
Beat the butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
Gradually add the dry ingredients to the mixture, mixing gently until just combined.
Mix Biscoff spread and crushed cookies in a small bowl.
Shape the cookie dough into small discs and fill with Biscoff filling.
Roll into balls and place on the baking sheet, spacing 2 inches apart.
Bake for 10-12 minutes, until edges are set and centers remain soft.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Serve warm or at room temperature.
