Directions
Preheat your oven to 375°F (190°C).
Prepare the bell peppers by cutting off their tops and removing the seeds and membranes. Set them upright in a baking dish, ready to be filled with deliciousness!
Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
Mix in the minced garlic, taco seasoning, salt, and pepper. Let everything cook for another 1-2 minutes until fragrant.
Combine the beef mixture with the cooked rice, black beans, corn, salsa, and shredded cheddar cheese. Stir well until every ingredient is happily merged together.
Stuff each bell pepper with the beef mixture, packing it down gently. Top each pepper with extra shredded cheese.
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and continue to bake for another 10-15 minutes, until the peppers are tender and the cheese is nicely melted.
