How to Make BBQ Chicken & Roasted Sweet Potato Bowls
Preheat your oven to 400°F (200°C).
Toss the diced sweet potatoes in a large bowl with olive oil, paprika, garlic powder, salt, and pepper.
Spread the sweet potatoes on a baking sheet in a single layer and roast for 20–25 minutes.
Steam the broccoli florets in the last 10 minutes of roasting.
Combine the shredded chicken with sugar-free BBQ sauce in a bowl.
Assemble the bowls with roasted sweet potatoes, BBQ chicken mixture, and steamed broccoli.
Sprinkle shredded cheddar cheese on top if desired.
Garnish with chopped green onions and serve immediately.
Notes
For an extra zing, add a squeeze of lime juice.
