Ingredients

Steak
  • 2 pieces Ribeye or sirloin steaks about 1 inch thick
  • to taste Salt for seasoning
  • to taste Pepper for seasoning
Glaze
  • 2 tablespoons Olive oil for cooking
  • ½ cup Balsamic vinegar
  • 2 tablespoons Honey
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh rosemary chopped
Tomatoes
  • 2 cups Heirloom tomatoes
  • to taste Fresh basil leaves for garnish

Method

Prepare the Glaze
  1. In a small saucepan, mix the balsamic vinegar, honey, minced garlic, and chopped rosemary. Simmer over medium heat for 5-7 minutes, stirring occasionally, until it thickens slightly. Remove from heat.
Cook the Steak
  1. Generously sprinkle salt and pepper on both sides of your ribeye or sirloin steaks.
  2. In a large skillet, pour in the olive oil and warm it over medium-high heat.
  3. Add the seasoned steaks to the skillet and sear for about 4-5 minutes on each side for medium-rare.
  4. In the last minute of cooking, generously brush the balsamic glaze over each steak.
Prepare the Tomatoes
  1. In a mixing bowl, gently combine the heirloom tomatoes with a drizzle of olive oil, salt, and pepper.
Serve
  1. Once cooked, remove the steaks and let them rest for 5 minutes. Then, slice them against the grain.
  2. Arrange the sliced steaks on plates and drizzle on the remaining balsamic glaze. Serve alongside the seasoned heirloom tomatoes.
  3. Garnish with fresh basil leaves.
