Ingredients

  • 2 cups cherry tomatoes fresh tomatoes enhance the sweetness and flavor
  • 1/4 cup olive oil use high-quality for richness
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano complements the flavors beautifully
  • 1 pinch salt
  • 1 pinch pepper freshly cracked adds heat

Method

Directions
  1. Preheat your oven to 400°F (200°C).
  2. Cook the pasta in a large pot of salted boiling water until al dente, according to package instructions.
  3. Reserve 1 cup of the pasta water, then drain the pasta and set it aside.
  4. Combine halved cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and pepper in a baking dish. Toss gently until everything is well-coated.
  5. Place the block of feta cheese in the center of the tomatoes.
  6. Bake for 25–30 minutes, until the tomatoes burst and the feta is soft and lightly golden.
  7. Mash the feta into the roasted tomatoes and garlic with a fork after removing it from the oven.
  8. Add the cooked pasta to the dish and toss to combine everything well.
  9. Adjust consistency if needed by adding a bit of reserved pasta water until you reach your desired creaminess.
  10. Serve warm, garnished with fresh basil and a sprinkle of red pepper flakes.
