Method

Cooking Steps
  1. Preheat your oven to 400°F (200°C).
  2. Cook the pasta in a large pot of salted boiling water until al dente.
  3. Reserve 1 cup of the pasta water, then drain the pasta and set it aside.
  4. Combine halved cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and pepper in a baking dish.
  5. Place the block of feta cheese in the center of the tomatoes.
  6. Bake for 25–30 minutes, until the tomatoes burst and the feta is soft and lightly golden.
  7. Mash the feta into the roasted tomatoes and garlic with a fork.
  8. Add the cooked pasta to the dish and toss to combine everything well.
  9. Adjust consistency if needed by adding reserved pasta water.
  10. Serve warm, garnished with fresh basil and a sprinkle of red pepper flakes.
