Method

Instructions
  1. Toast the whole grain bread slices until golden brown and crispy.
  2. Mash the ripe avocado in a small bowl using a fork.
  3. Mix in lemon juice, salt, and pepper with the mashed avocado.
  4. Simmer water in a saucepan over medium heat until it begins to gently bubble.
  5. Slide the eggs into the simmering water.
  6. Cook the eggs for about 3–4 minutes until the whites are set.
  7. Heat a non-stick skillet over medium heat and drizzle in a little oil.
  8. Fry the eggs for about 2–3 minutes on each side for sunny-side-up perfection.
  9. Whisk the eggs in a bowl if you prefer scrambled eggs.
  10. Spread the mashed avocado evenly over the toasted bread slices.
  11. Place the cooked eggs on top of the avocado toast.
  12. Sprinkle with red pepper flakes and fresh herbs if desired.
  13. Serve immediately while the toast is still warm and the eggs are fresh.
